Diet Coke Brownies

Sounds crazy… I know. You just add diet soda to the brownie mix and voila! You’ve got yourself some pretty tasty brownies. I heard about them from the WW message boards and decided to give it a try and the best thing about them is that they are only 2 points!! Perfect for any chocolate craving (of which I am a chronic sufferer) and they’re so easy to make! My first batch came out pretty good considering I did not have much faith in them to begin with. Here is the recipe along with some photos:

  • Brownie Mix
  • 8oz Diet Coke
  • 1/4 cup Egg Whites (optional)
Mix it all up!

Just mix everything together – drop into cupcake cups and bake at 350* for 12-14 minutes.

They’re quick and easy and one box of mix makes about 15-20 brownies which is perfect! If you want to add a little more to them, once they’re cool just top them with some fat-free cool whip.

Have fun making these – they’re so easy! I have also heard that you can make Diet-Coke Cakes and all sorts of stuff – pretty interesting, I might have to look into that so if I do, I’ll keep you updated:)

  1. Diet coke cake is amazing – and I’ve got an awesome icing recipe if you’re interested. You just mix a box of sugar free fat free vanilla pudding mix with some skim milk and Cool Whip Free (or whatever it’s called). Seriously, it’s amazing. You can also do yellow cake with 7-Up or any light sodas. It’s so moist. I’ll have to try the brownies though, I’ve never done that.

  6. Diet soda contains aspartame, no? I wouldn’t suggest baking with diet soda because aspartame is not supposed to be heated to above 86 degrees because above that heat it becomes fermaldehyde..

  7. Yikes! There must be another way to make these – Diet Rite sodas do not use aspartame so I would go that route if you can!

  8. That is an urban legend about aspartame being heated – otherwise when it entered your body, it would turn into formaldahyde!
